Hate fried okra? Try this simple recipe.
1 lb. fresh Okra pods
1 tblsp. Olive oil
1 tsp. cumin powder
Salt, to taste
Freshly ground black pepper, to taste
1) Wash and completely dry okra pods. Slice okra into match
sticks or rounds.
2) In a non-stick pan, heat the oil. Add the sliced okra
in a single layer in the pan. Cook for 10-12 minutes turning the pieces every 2-3
minutes until golden brown.
3) Sprinkle the cumin powder, salt and pepper. Cook for
another 2-3 minutes or until the cumin is aromatic.
4) Remove from heat and serve. Makes 4 side dish
portions.
Notes:
The secret to crispy, not-gummy okra is to dry the pods
completely before slicing them.
DH likes okra that is almost burnt, so I cook it about
20 minutes.
